Butternut Squash ~ Not just a table decoration
Have you ever saw the Butternut squash at the grocery and wondered “What do I do with it?” I did, then I found a recipe and tried it, now it is one of my favorite foods.
Butternut Squash has a sweet nutty flavor similar to a Pumpkin. The squash can be stored longer that summer squashes because their skin is so hard and thick. Store in a cool dry place for at least a month.
How to prepare the Butternut Squash..
Roasted Butternut Squash recipe
1- Butternut Squash, pealed, seeded and cut into cubes
2 -med. Onions peeled and quartered
Olive Oil for drizzling
Salt and freshly ground pepper
Preheat the oven to 400 degrees.
Put parchment paper on a baking sheet and set aside
- Mix the squash and onion together and arrange in a single layer on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper to taste. Bake for 40 -45 minutes until the vegetables are golden and tender and serve.
